Veggie Fried Rice - so easy & quick

Such an easy recipe to cook!

I am sure everyone in my list has tried this recipe at least once and ended up cooking with variations again and again! If not, then try now!

We ordered for some yummy machurian from a restaurant nearby and I wanted to cook the fried rice on my own as I had mostly all the vegetables stocked up in my ref.

We all know how this is made but here is my recipe:


  • Handful of Beans - cut half in length to make this thinner & easy to cook
  • 2 Carrots  - Sliced
  • 2 Onions - Sliced
  • 1 Capsicum - Sliced
  • Green chillies - Slit & as per tolerance/taste
  • Cooked rice
  • Salt - as per taste
  • Soy Sauce - as per taste 
  • Vinegar - as per taste
  • Salt - as per taste


Method:

People generally fry the onions first but I like to put in the beans first. It gets cooked well as well as the taste is much better. Then I put in the carrots and capsicum together & soon the onions. Green chillies go in the last with the salt & sauces.
Add the rice when all the veggies are cooked but not soggy.

Hey! your fried rice is ready to eat with your favorite machurian/curry or just like that!

Note:

  • You may add more veggies like green peas, cauliflower, cabbage, brocolli etc
  • You could avoid the sauces if you just want them plain

Spiced Tomato Coconut Rice

Are we talking about quick cooking!? Yes, We are!

Being a south Indian all my friends ask me to cook lemon rice, curd rice, tamarind rice, coconut rice & tomato rice for them quite often. 

This time I had some time to click the pic so here comes my recipe for some 
Spiced Tomato Coconut Rice.

This serves as one of the tangy tasty filling dishes for dinner.

There are variations to this which I will keep posting. 




However, for this one all you need is:

  • 1 cup dessicated Coconut
  • 4 ripe medium tomatoes
  • 1.5 cups rice
  • 1 tsp Mustard seeds
  • 2 tsps  Roasted Peanuts
  • 1 tsp Urad dal/White lentil
  • 3 Green chillies
  • 1 tsp Turmeric Powder 
  • 4 ground pepper
  • 1 Bay leaf
  • Salt as per taste
  • Oil/Ghee - for cooking


Method:
Boil the rice & keep aside.
Now heat a pan & add some ghee. Throw in the mustard seeds & when they start to splutter add the urad dal. As soon as it gets golden add the green chilies & the tomatoes to it. Ensure that the tomatoes are cut very thin. It will quicken the cooking process & make it pasty very easily. Cover to cook.
The oil can be seen in the sides so it is now ready for the coconut in it. Saute & add turmeric powder, ground pepper & salt to this. Within a minute add the peanuts & the boiled rice to this & your Tomato Coconut rice is all set to be served with Garlic Rasam & Papad.

Note:
Turmeric Powder/Coconut & Peanuts are optional
You may add a dash of Ginger garlic paste if you wish
You may add curry leaves too - I didn't have fresh ones
You can carry this in your lunch box too
You cant keep this for long as coconut gets spoilt easily - not good for long journeys

Fava Beans Rice

Oh yes! You can quickly make some lip smacking rice with these Fava Beans in it.

Fava Beans are also called Broad Beans. Avarakai in Tamil.

It is high in Protein & Fiber but low on Fats so it surely should be tried.

So let's get to cooking.



Get ready with:
  • Cooked Rice - 1 Bowl
  • Broad Beans - 12
  • Spring Onions - 2
  • Salt - As per taste
  • Oil - 2 teaspoons

Put it together:
  1. Trim the beans & chop each in 2 or 3 parts. You may chop them according to your wish however I like them bigger as they look delectable to me.
  2. Now heat a deep pot with water in it. When the water boils throw in the beans & let them get cooked. Remove from heat & strain when done.
  3. Ready a wok on high flame with 2 teaspoons of edible oil in it & add the fava beans & spring onions together. Saute for a minute.
  4. Now add the cooked rice & salt to this & mix in well.
  5. Your rice is ready to be served with some hot manchurian!

Note:
  • You may use normal onions if spring onions arent available although you will miss the greens & the lovely fresh taste
  • Serve them with any hot & spicy curry
